Ingredients

  • 1 Lb Boneless Chicken Breasts

  • 1 Medium Shallot

  • 4 Garlic Cloves, Minced

  • 32 oz Campbell’s Chicken Broth with White Wine

  • 1/2 Cup Heavy Whipping Cream

  • 2 Tbsp Olive Oil

  • 10 oz Baby Spinich

  • 1/2 Cup Sun Dried Tomatoes (In Oil), Drained and Thinly Sliced

  • 1/2 Cup Cherry Tomatoes, Halved

  • 1/2 Cup Parmesan Cheese, Grated

  • 1/2 Tsp Salt

  • 1/2 Tsp Ground Black Pepper

  • 8 oz Fettuccine, Cooked According to Package Directions

  • Salt and pepper the chicken on both sides. In a large nonstick skillet, heat 1 Tbsp oil over medium heat. Add chicken and cook 4 to 5 minutes or until browned. Flip and cook 3 to 4 minutes more or until browned on both sides and cooked through. Keep warm.
  • Add the rest of the oil as well as the shallot and garlic to the pan. Sauté for 1 to 2 minutes over medium heat or until the shallot and garlic have started to soften. Add the broth and scrape the bottom of the pan to loosen the browned bits. Continue cooking over high heat. Simmer until the liquid has reduced by half, about 8 to 12 minutes.
  • Add cream and sun-dried tomatoes. Bring to a simmer again for 5 minutes, stirring frequently, until the sauce thickens. Stir in spinach, cherry tomatoes and Parmesan; cook until spinach is wilted and sauce is thick enough to coat pasta.
  • Combine sauce with prepared pasta and toss well to coat; let stand 5 minutes before serving. Cut the chicken cutlets into strips. Divide pasta among serving bowls and serve with chicken and additional Parmesan.
