Ingredients

  • 1 Pound of Raw Shrimp, Thawed and Peeled

  • 1 16oz Box of Linguine

  • 1 Tbsp Olive Oil

  • 1 White Onion, Chopped

  • 4 Garlic Cloves, Minced

  • 1/2 Red Bell Pepper, Diced

  • 1/3 Cup Sweet White Wine (Moscato or Riesling)

  • 28oz Can Whole Tomatoes

  • 1/2 Cup Fresh Parsley

  • 1/2 Tsp Dried Basil

  • 1/4 Tsp Cayenne Pepper or to Taste

  • 1/2 Tsp Paprika

  • 1/2 Tsp Garlic Powder

  • Pepper to Taste

  • Honey (Optional)

Directions

  • In a sauté pan, heat olive oil over medium heat and sauté the onions until translucent.
  • Add garlic and peppers, heat for 2 minutes while stirring. Add the white wine and reduce by half.
  • Add tomatoes, parsley, basil and cayenne pepper. Reduce heat to medium-low. Half cover and simmer for 20 minutes, stirring frequently and crushing the tomatoes.
  • Meanwhile, bring salted water to a boil and cook the pasta as directed by the manufacturer. Drain and reserve.
  • Next, sprinkle the shrimp with paprika, garlic powder and pepper to taste. Coat them well. Heat olive oil in a Cast Iron Skillet over medium heat and cook the shrimp for 3 minutes on each side, or until opaque (cooked).
  • 5 minutes before the sauce is done cooking, adjust the seasonings. If the sauce is too acidic, add a little honey to balance.
